一般に「between=2つ、among=3つ以上」と教わりますが、本当の基準は「個別に意識するか／ひとかたまりとして見るか」。3つ以上でも個別に並べればbetweenが使えます。

choose between（〜から選ぶ）はTOEIC定番
3つ以上の集まり・グループの中に位置するときに使います。個々を区別せず一つのまとまりとして見るのがポイント。例：This product is popular among young consumers.（若年層に人気）／ The CEO is among the most influential leaders.（最も影響力のあるリーダーの一人）。
among + 複数名詞 / 集合名詞
among us（私たちの中に）など
amongst も同義（イギリス英語寄り）
